In the run up to Halloween, there is always an increase in the amount of pumpkins readily available in supermarkets and organic food markets throughout Ireland, and why most of us will invest in a pumpkin or two to create our very own Jack O’Lantern’s, enjoying the task of hollowing out, carving frightening little faces, and then decorating with candles inside so that they can be used to adorn our windows on all Hallows Eve, most of us do not know what to do with the wonderful pulp that we have removed!

When in fact there are so many glorious sweet and savoury dishes that you could make, you’ll wonder why you didn’t think of doing it before.

Some of our favourites include curried or spice pumpkin soup, pumpkin risotto and pasta dishes, the American favourite pumpkin pie, pumpkin cheesecake, pumpkin gingerbread, pumpkin influenced stew, pumpkin bread and pumpkin muffins or alternatively why not use pumpkin in some Halloween inspired cocktails such as a pumpkin martini or a pumpkin punch!
